Besan paratha

This is an easy and healthy paratha.  quick when you have no time or vegetables around and they taste great with curds.    Taken from Tarla dalal.

Ingredients :
For dough combine all the ingredients and make a soft dough
Atta 1 cup
curd 1 1/2 tsp
salt
water (if required)

Filling mix well
roasted besan 1/2 cup
ginger green chillie paste 1 tsp
coriander leaves finely cut  1/4 cup
salt to taste
oil

or roasted besan 1/2 cup
red chillie pwd 1 tsp
jeera pwd 1/2 tsp
dried pudina leaves 1tsp
salt
procedure
Roll one portion of the dough into a circle.  spread oil on one side.
Spread one portion of the stuffing in an even layer on the circle and roll into a cigar-shape.
Press and roll again into a spiral like a chakli.
Roll out again into a circle using whole wheat flour.
Cook on a hot non-stick tava (griddle), until both sides are golden brown.
Lift the paratha with a pair of flat tongs and roast over an open flame till brown spots appear on both the sides.
Repeat with the remaining dough and the stuffing
Serve hot.

Lauki Besanwali

This is a tasty and quick recipe.  lauki or bottlegourd is not usually eaten by children and adults.  saw this dish in one of the groups on facebook ( from Sunayana's blog) and gave it a try.  was pleasantly surprised and now i make this dish quite often.

ingredients :
lauki
besan (dry roast )  3 - 4 tbsp
red chilli pwd
garam masala
coriander pwd
haldi
salt

tomatoes : optional

for seasoning : oil
rai
jeera
hing
curry leaves
red chillies
dhania for garnish


procedure

wash peel and cut the lauki into one inch cubes
dry raost the besan till a nice aroma comes and keep aside
heat oil add rai, jeera
when it splutters add hing and red chillies and curry leaves and haldi
( if u want can add tomatoes now and cook for a minute)
add the lauki pieces and stir well, add coriander pwd, red chilli pwd garam masala and salt and mix well.
add a few drops of water (if required) and cover and cook for a few minutes ( check in between)
till lauki is soft.
then add check the seasoning and add besan and mix well for a minute
garnish with dhania leaves and it is ready !

Corn fried rice

This is fave of my kids and again easy to make .

Cook corn and rice separately.  Take oil in a kadai.... Add cooked corn, sauté for a minute.  Add grated carrots and sauté for a minute.  Add salt, chilli flakes and pepper pwd.  Add some pulao masala or garam masala just for smell.   Add rice and mix well.  Check seasoning.  Cover and keep for a couple of minutes on sim.  Then add small paneer pieces and oregano.  (Paneer can be fried and added as well) .  Cover and cook for a minute and serve with any gravy ! 



Phanna polo

Mix oats 1/4 cup, maida  1 cup,  rava 1/4 cup, and a bit of rice flour.  Add green chillies, and salt and a pinch of sugar.  
Prepare a tadka of oil, rai and curry leaves.  Can add red chillies also.  When it cools add the tadka to the batter.

The batter shud be of pouring consistency, thinner than the normal dosa batter.  
Pour the batter on the at the Tawa when it is hot ....


Lauki with chana dal

This recipe is from Suphala Shenoy !  Simple and delicious !

Cook chana dal with haldi and green chilli and lauki separately.  Take oil add jeera and then hing.
Add tomatoes,  dhania pwd and red chilli pwd,  then the cooked dal and lauki. 
Add a spoon of sugar and salt to taste.  Then add garam masala.
Cook till thick and garnish with dhania leaves. 

I used sambhar pwd instead of garam masala and curry leaves in place of coriander leaves.

Biscuit cake

Powder one packet of good day biscuit (100 gms ) and one packet of hide and seek biscuit in the mixie.
Add one tsp vanilla essence,  2 - 3 tsp of pwd sugar ( as per taste ) and 2 - 3 tsp of cocoa pwd and run the mixie again.
Add around one cup of milk and mix.
Finally add around 1 Tsp of plain eno fruit salt and mix. 
Pour into a microwave bowl and micro for 4-5 minutes.
Enjoy.

Can use any biscuits, like bourbon, parle g etc....

Cheese paratha

Chapati dough
Filling : gratEd cheese, salt, chilli flakes, grated carrots, finely chopped dill leaves. 

Or : grated cheese, salt, chilli flakes, chopped cashews, cut raisins, dates etc. 


Moong Dosa

Moong :  2 cups soak for at least five to six hours .... Has to be soft
Rice.     :  1 cup. Soak for 3-4 hours
Poha.    :   1/4 cup soaked I used thick poha
Green chillies as per taste
Salt as per taste 

Grind the above to a smooth paste.  I used a mixie.  Leave for an hour or so ... Not required .  And make dosa.

For filling :  mix grated cheese, salt chilli flakes, grated carrots and finely chopped dill leaves .

Crispy dosa

This recipe is from the author of the blog Kudpi's Garam Tava.  I made the batter in the moxie and not in the grinder... The doses were crisp and had a lovely colour.....

Raw rice : 4 cups 
Urad dal :  1 1/2 cups
Chana dal : 1/4 cup
Tuar dal : 1/4 cup
Methi   : 2 tsp
Phova ( thick ). : 1 fistful
Sugar :  2 tsp
Salt. : to taste

Soak ingredients 1 -5 for at least 4 hrs.

Wash pho a and grind along with the other ongredients to a thick dosa batter, slightly thinner than idli batter
Allow it to ferment at room temperature for 8-12 hrs.
Add sugar and salt to taste. Mix well and allow it to stand for 15 min and then make yummy dosas !

Neer Dosa with varai


Wash and soak varayi at least for an hour . I soaked overnight.
 And grind fine with coconut 1/4 cup coconut for one cup varayi and add salt and make neer dosa !

Paneer Chilli

Thank u  Seema D Shenoy for the jahtpat yumm recipe:
 Marinate 1 cup paneer cubes with salt, haldi, 2-3 tsp red chilli pwd, 1/2 tsp of ginger garlic pate, 1 tsp of vinegar, 1 tsp of soya sauce, chopped curry leaves and leave for ten minutes.
in a pan take 1 tbsp oil, saute onion cubes ( 1 no.) and capsicum cubes ( 1/4 cup).. add marinated paneer and fry for 2 minutes. cover the lid and cook for two minutes.. finally add chopped ginger and garlic ( did not add this) stir fry add a dash of lime and chopped dhania leaves .. I added some chopped dill leaves too....

Donuts

Doughnuts hot off the pan.

Ingredients : : Oil -for frying, Egg-1, Sugar-1/2 cup, Milk-1/2 cup, melted butter-2 tblsp, maida-2cups, baking powder-2tsp, dash of cinnamon, dash of nutmeg,dash of salt.
 

METHOD:In a large bowl,beat together egg and sugar. Stir in milk and butter. Sift all dry Ingredients.
Mix the dry ingredients into the egg mixture.and mix lightly.... Its a very sticky dough.
Chill the dough for 30 minutes.
Still the dough is sticky... need not worry.
On a floured surface, flatten the dough to 1/2 inch thickness,with ur hands or a belan.
Cut out doughnuts. Transfer to a floured surface carefully and allow to dry.
Heat oil in a kadai,let it be hot,but as soon as u slip in the donuts,reduce the heat to sim, and fry until golden on both sides.
decorate with a mixture of powdered sugar and cinnamon powder or with melted choco.

sweet dessert donuts 

Sev tamatar ki sabzi

This is an adaptation of the famous Gujarati or Rajasthani dish Sev tamatar sabzi .... My good friend Mala made it and we all loved it ... It is so simple ....and all time favourite :)

Ingredients :
Spring onion: Cut fine
Tomato: Chopped fine
Mota sev  ( haldirams royal sev, if u like it spicy then theeka sev can also be used )
Lime juice
Salt
Sugar ( pinch )
Dhania leaves
Dhaniya jeera powder,
haldi powder
Red chilli powder
Ginger Garlic paste

Oil for tadka
Rai
Jeera
Hing

 Method :
1. Prepare tadka with the ingredients mentioned...
2.  Once the tadka is done add the ginger garlic paste... and fry till the raw smell goes
3.  then add the chopped spring onion.. and fry till the spring onions are slightly cooked.
4.  then add the tomatoes.. and cook till the tomatoes are slightly mushy..
5.  add the masala powders as per taste and cook for a couple of minutes.
6.  Add two cups of water and bring to boil....add lime juices and salt.
7.  add chopped coriander leaves..
8.  just before serving add the sev and boil for a minute and serve immediately with rotis...

Mango Cake

Thank you Kiranmayi Kiran ! It was yumm !

recipe : maida - 1 1/4 cup, baking powder - 1tsp, salt - a pinch, cashew nuts - 1/2 cup, sugar - 1/2 cup heaped, cardamom - 2 peeled, refined oil - 4 tbsp, fresh cream - 2 tbsp, milk - 2 tbsp, mango pulp - 1 cup,
 choco chips - 1/4 cups.  vanilla essence - 1 tsp,  ( cocoa pwd - 2 tsp optional)


Sieve all the dry ingredients and keep aside.
powder the cashew to a coarse powder
powder the sugar and the cardamom
add mango pulp and sugar mixture in the mixie jar and pulse briskly four times.
add oil and pulse twice then add cream and pulse once
pour the batter into the mixing bowl and gently fold in maida milk and cashew paste and the choco chips. add milk if too thick.
bake at 180 deg C for forty minutes or till done.
note :i added a tsp of vanilla essence too 

         a teaspoon or so of cocoa pwd may enhance the colour and flavour !!

Khal Khal Phanna upkari with baby corn

This recipe is by Sandhya Nayak Kamath.  it is simple gravy which goes well with dosa (esp neer dosa) and simple rice like jeera rice or lemon rice.

Grind about 10 -12 fried Kashmiri chillies along with some guntur chillies and 2-3 flakes of garlic, salt and tamarind.  grind to a fine paste.
in a kadai take some coconut oil, add 6-7 flakes of peeled garlic, when it turns pink add 2 finely cut tomatoes and fry till it turns pulpy.  add 1 tbsp of tomato puree.  add the ground paste and fry for a minute or so.
add the baby corn ( or paneer ) and check the seasoning. and simmer till done. adjust the thickness to your taste and requirement.

Paneer paratha


This is the recipe of my dear friend Kiranmayi ! Thank u Kiran for the yumm and easy recipe ! 
Mashed paneer
Grated capsicum
Besan
Kasuri methi
Chapati dough
Jeera
Rd chilli pwd
Aamchur
Salt
Haldi
Grated ginger 

Heat oil in a kadai, add jeera, when it splutters add capsicum and fry for a minute and then add ginger and then all the spices... Finally add paneer and besan .. Make parathas and enjoy with dahi and pickle....

Note : fresh methi leaves can also be used.  Grated carrot can also be added !
