Ashtami Laddoos

This is usually made during janmashtami ... This is a healthy and a favourite ladoo.  I have made this with Manna health mix, atta ( whole wheat flour ) with jaggery.  Usually made  with the special sticky jaggery which is usually available during the shravan month. (during ashtami and chauthi). But it can be made wih normal jaggery also.

Ingredients :
Groundnuts
Jaggery.
Whole wheat flour
Manna health flour 
Chutney dal
a small bowl of water
half glass of water
cardamom powder
ghee 

Method:
In a kadai, dry roast the groundnuts, till the skin comes off. Remove from fire and rub the groundnuts till the skin is gone. 
In the kadai, add the ghee and when it is hot, add the whole wheat flour and roast on medium flame till a nice smell comes and the flour is nicely roasted.
 Powder the chutney dal and keep.
Now in the kadai, add half cup water and the jaggery and stir occasionally till the jaggery is fully dissolved.  keep on flame till when a drop of the syrup when added to a bowl of water comes together . ( or you shud be able to make a sfot round with it)
Switch off flame immediately and add the flours quickly and also the cadamom pwd and groundnuts.  mix thoroughly .  the quantitiy of flour depends on the jaggery.
Smear your hands with ghee and make laddoos as quickly as possible.  

These laddoos become harder overnight .

Coffee Chocochip bundt cake

This is the first Bundt cake I tried.  This can also be baked in a loaf tin.
The recipe is from my friend Sai's blog (Geeths Dawat).  It has my favourite flavours of coffee and chocolate in a cake.  Perfect for tea time or anytime.

Ingredients :


Plain flour or self raising flour   :  1 1/2 cup ( used self raising flour)
Baking powder                           :  1/2 tsp
Baking soda                                :  1/4 tsp
Salt                                             : 1/2 tsp
Unsalted butter                           : 1/2 cup (at room temperature)
Vanilla or plain sugar                  : 1 cup    (powdered)
Eggs                                            : 2
Buttermilk                                   : 100 ml  ( refer Notes)
Vanilla Essence                           : 1 tsp
Instant Coffee pwd                      : 1 tsp  ( Nescafe)
Warm water                                 : 1 tsp
Chocolate Chips                          : 1/4 cup
Cinnamom pow                           : 1 tsp  (optional)

Procedure :

1.  Preheat oven 10170 deg C.
2.  Grease and flour a six cup bundt pan or prepare a baking tin.
3.  Sift flour, baking powder, baking soda and salt.
4.  Mix together instant coffee powder and warm water and keep aside.
5.  Cream together butter and sugar.  beat in the eggs one at a time, followed by vanilla essence and
     coffee mixture.
6.  Add flour and buttermilk in 3 lots and beat on low speed.
7.  Mix the chocolate chips with a tsp of flour and fold into the mixture.
     Mix in the cinnamom powder.
8.  Pour into the prepared tin and bake for 50 - 60 minutes or till done.



Notes :  
to make100 ml  buttermilk : Mix  50 ml milk and 50 ml curd, till smooth.

Oreo Nutella bites

This is from Rekha Vishwanath Nayak's blog.

Nutella : 1 cup
eggs 2
 maida 10 tbsp
salt 1/4 tsp
oreos 12
vanilla 1 tsp
preheat oven to 180 deg
Beat eggs, add flour, nuttella and salt and essence. mix well.

use a scoop and spoon 2tsp of batter into ramekins or muffin moulds.  place an oreo and top with batter.  bake for 12 -1 3 minutes. ( can micro for 4 minutes).  This batch was baked.
I could make only 6 !!

Donuts

Doughnuts hot off the pan.

Ingredients : : Oil -for frying, Egg-1, Sugar-1/2 cup, Milk-1/2 cup, melted butter-2 tblsp, maida-2cups, baking powder-2tsp, dash of cinnamon, dash of nutmeg,dash of salt.
 

METHOD:In a large bowl,beat together egg and sugar. Stir in milk and butter. Sift all dry Ingredients.
Mix the dry ingredients into the egg mixture.and mix lightly.... Its a very sticky dough.
Chill the dough for 30 minutes.
Still the dough is sticky... need not worry.
On a floured surface, flatten the dough to 1/2 inch thickness,with ur hands or a belan.
Cut out doughnuts. Transfer to a floured surface carefully and allow to dry.
Heat oil in a kadai,let it be hot,but as soon as u slip in the donuts,reduce the heat to sim, and fry until golden on both sides.
decorate with a mixture of powdered sugar and cinnamon powder or with melted choco.
