Garlic Naan

Whenever we go to restaurants , and if we have to order north Indian, Naans are usually ordereed. 
 Mom used to make Naans when I was small and I used to love the colour and the softness.. 
I have made garlic Naan today from Hebbars Kitchen, but have used a mix of maida and whole wheat flour..

Ingredients :
Maida : 2 cups ( Used 1 cup maida, 1 cup wheat flour )
baking soda : 1/4 tsp,
baking pwd : 1 tsp
salt : 3/4 tsp
oil : 2 tbsp
Curd : 1/4 cup
garlic : 1tsp grated 
water : to knead to make dough

Garlic Butter
butter : 3tbsp melted
garlic : 1tsp grated
coriander leaves : 2tbsp Finely chopped 

Instructions 
1.  In a large mixing bowl, take the flour, baking soda, baking pwd and salt and mix well.
2.  Add 2 tbsp oil, 1/4 cup curd, and garlic.
3.  Mix well, combining well.
4.  Add water as required and knead to a smooth and soft dough.
5.  Grease the dough with oil, cover and rest for 2 hours.
6.  Meanwhile prepare agarlic butter by mixing the melted butter, garlic and coriander.
7.  After 2 hours,  knead the dough lightly and then pinch out a medium shaped ball of the dough to make a naan.
8.  lightly roll the naan to an oval shape ( it should not be bigger then your tawa)  taking care not to make it too thin.
9.. Heat the tawa on the gas. Brush the naan on one side with water , covering the entire surface.  gently place the naan withe watered side down onthe tawa.
10.  After a minute flip the tawa on the gas, holding the naan directlyover the flame till it turns light brown. Brush some prepared garlic butter on the naan and then gently scrape off the tawa.

Onion sanna polo

Another aamchi delicacy had as a side dish during meals.  

Coconut grated one and a half cups
Rice.  1 cups soaked for about two hrs
Tamarind lemon size
Red chillies. ( fried and a mix of both kashmiri and spicy) around 12-15 ( as per taste)
Salt to taste
Jaggery a scrape
Onions 2 small cut fine
Hing 1/2 tsp

Grind coconut red chillies tamarind to a fine paste with little water.
Then grind the rice to a coarse paste with  little water.  Mix with the coconut masala and make sure the batter is thick not like dosa !
Add salt jaggery and hing and the finely cut onions.
Heat a flat tava and make small pancakes!  Drizzle oil and roast till golden !

Vegetable Biryani

this is adapted from the recipe 'egg biryani'.  instead of eggs i used mixed vegetables (also soya chunks).

Make greeen masala by grinding ginger, green chillies, garlic, coriander leaves and mint leaves.

cut all vegetables and prepare the soya chunks too.
fry long chopped onions till crispy.

Heat oil and ghee in the pressure cooker (or pan).
 Add whole garam masala ( cloves, green cardamom, cinamom, start anise, mace )
add slit cashew bits and slit green chillies.  fry for a while.
Add chopped onions and when brown add chopped tomatoes and fry till mushy.
 add soaked basmati rice ( soaked for ten minutes)and fry for a minute.
add the green masala, salt, haldi and garam masala mix well. ( I used Abhi ruchi biryani powder)
add the required quantity of water and pressure cook.

serve hot with raita of your choice.

Moong dal varn

This recipe is from my friend Sujata, with whom I used to have long conversations literally everyday in Muscat. 
Had this recipe from a long time before I finally tried it out today and it tastes yumm!  Something other than the dal, rasam, sambhar to have with rice ! 



Ingredients 
Moong dal one cup
Coconut grated   Little more than 1/4 cup

Green chillies as per taste
Fried red chillies. 2
Tamarind a scrape
Haldi a pinch
Jeera 1 1/2 tsp
Salt

Tadka ghee rai curry leaves and red chillies

Grind coconut chilles tamarind  haldi and jeera to a smooth paste.

Dry roast moong dal, till slightly red, wash and cook and then mash.
Add the masala, enough water to get the required thickness and salt and boil. 
Finally give tadka !

Egg Dum Biryani



This is inspired by Vidya Nayak Shenoy's post on face book.  



Make greeen masala by grinding ginger, green chillies, garlic, coriander leaves and mint leaves.
Boil eggs
fry long chopped onions till crispy.

Heat oil and ghee in the pressure cooker (or pan).
 Add whole garam masala ( cloves, green cardamom, cinamom, start anise, mace )
add slit cashew bits and slit green chillies.  fry for a while.
Add chopped onions and when brown add chopped tomatoes and fry till mushy.
 add soaked basmati rice ( soaked for ten minutes)and fry for a minute.
add the green masala, salt, haldi and garam masala mix well.
add the required quantity of water and pressure cook.

Now make a layer of rice + onions+ cut egg halves in a microwave safe bowl.  finish off with a layer of rice.  
microwave for five minutes.
Serve with raita of your choice.
